"My new MBM kitchen? A wonderful surprise!"

In September 2024, Daniel Cardán, chef of the Portonovo restaurant, installed a new MBM kitchen comprising frytop, bain-marie, burners, fryers and lava stone grills from the Domina Pro range.
Curious to hear his opinion of the products installed, we were impressed by the enthusiasm and satisfaction with which Daniel spoke of benefits he has experienced in cooking and running his prestigious restaurant in Madrid.
A mix that can be summed up in three points: "quality, energy savings and ease of cleaning beyond expectations!"
Below the interview by our partner IHS Tecnológicos, whom we thank for their collaboration and great professionalism at the service of restaurateurs.
How has your experience in the kitchen improved since the installation of the new MBM cooking block? 'First of all, the value for money is very good. The cooking is precise and the gas and electricity consumption reduced. The fryers reach temperature immediately and maintain it without causing problems when cooking food in succession."
Has the quality of the dishes improved in terms of cooking and precision? "Exactly! We are very happy and satisfied that we can cook our dishes as we wish. The quality has become much better from the point of view of retrieving, holding and cooking food."
What aspects did you find most important when choosing the new equipment? "I consider the most important aspects to be value for money, ergonomics, firing power, ease of cleaning and maintenance of the equipment. MBM products are very easy to clean. The chrome-plated frytop is our flagship, it works like a charm! We usually use it at the lowest temperature, achieving impeccable cooking results with half the gas consumption!"
What benefits have you experienced in terms of energy savings? "Having a gas tank, we are always careful about consumption. Before, when the cylinder reached 15%, we would immediately order a new tank. Now we are more relaxed because we know that, thanks to the lower energy consumption due to the efficiency of MBM equipment, we have enough gas when the level reaches 15% in the cylinder. We are also more environmentally friendly: we used to use very abrasive products for cleaning; now we just use water, Mistol and a little vinegar. The equipment is very easy to clean, something I particularly appreciate in the kitchen. We often don't even use soap on the hobs, they seem to clean themselves! We clean the hobs with a solution of water and vinegar and they are perfect".

Tell us more about the equipment installed... "The bain-marie is very versatile and thanks to its accessories we can adapt it to pans of any size. The burners are very powerful and easy to clean. With a mixture of water and vinegar, the cast iron parts can be cleaned effortlessly and are as good as new. The fryers are very responsive, high-performance and have a high temperature holding capacity, which means that the food hardly absorbs any fat and the browning remains more even. In addition, using the knobs is very convenient and cleaning is quick and easy. We are very satisfied. The fryop is simply fantastic, I love it! At the lowest power, the cooking is perfect. Again, cleaning is very easy and quick, sometimes we don't even use soap".
